Here is the recipe for the no bake granola bars that we had at our first club meeting.
No Bake Granola Bars
2 ½ cups rice crispies ½ cup light corn syrup
2 cups oatmeal ½ cup peanut butter
½ cup firmly packed brown sugar 1 teaspoon vanilla extract
½ cup chocolate chips
Combine rice crispies and oatmeal in a large bowl. In a saucepan, bring sugar and syrup to a boil, then remove from heat. Stir in the peanut butter and vanilla. Pour the warm mixture over the cereal. Stir well. Press the mixture into a 13x9 inch pan. Allow the mixture to cool for approximately 10 minutes. Add chocolate chips on top and press into the mixture. For variety, add nuts, raisins, or M&M’s to the mixture in place of the chocolate chips.
